A basic recipe for brewing medium-roast coffee with the Chemex.

Chemex pour-over basics, medium roast (30 g · 500 g)

The filter is thick, so don't pour too hard.

Steps

  1. Prep

    Set the filter, add the grounds and level them.

    Bloomto 100 g

    From 0:00, pour to 100 g (100 g over about 17–20 s). Next pour at 0:30. Pour a little water in circles from the center, wet all the grounds and wait a moment.

    Pour 1to 200 g

    From 0:30, pour to 200 g (100 g over about 13–25 s). Next pour at 1:00. Pour slowly in circles up to the amount without breaking the bed of grounds.

  4. 1:00
    Pour 2to 500 g

    From 1:00, pour to 500 g (300 g over about 45–105 s). It should drain by about 3:34. Add the rest at a steady pace, as if splitting it into a few pours.

  5. Remove the filter

    When it has finished dripping, take the filter out right away.
