Kalita Wave recipe and how to brew
A basic recipe for brewing medium-roast coffee with the Kalita Wave.

Move in circles as you pour so the water soaks gently through all the grounds.

Steps
- Prep
Put the grounds in the dripper and level them.
- 0:00Bloomto 48 g
From 0:00, pour to 48 g (48 g over about 8–10 s). Next pour at 0:30. Pour in circles from the center to wet all the grounds.
- 0:30Pour 1to 96 g
From 0:30, pour to 96 g (48 g over about 6–12 s). Next pour at 1:00. Pour slowly so the water level doesn't drop too far.
- 1:00Pour 2to 168 g
From 1:00, pour to 168 g (72 g over about 9–18 s). Next pour at 1:30. Pour in circles without breaking the wall of grounds.
- 1:30Pour 3to 240 g
From 1:30, pour to 240 g (72 g over about 11–25 s). It should drain by about 2:49. Finish by pouring carefully up to the full amount.
- Remove dripper
Lift the dripper off the server to finish brewing.
How this recipe is built
Split into pours at a standard ratio to bring out the sweetness and body of medium-roast beans. With the wave-shaped dripper in mind, it aims for a steady flow.
